Thiézac, the Cheese Trail: a culinary journey through the heart of the region

Discover the richness and diversity of cheese. Nestled in the heart of the Cantal mountains, the village of Thiézac is a mecca for cheese-making tradition. Three local cheese dairies carry on a unique artisanal tradition here, transforming raw milk into iconic cheeses: Cantal, sheep’s cheese and blue cheese. These products, renowned for their quality and authenticity, are the result of a preserved terroir and the producers’ unwavering commitment. As emblems of our local areas and our artisanal expertise, this gourmet trail—often organised as a tourist circuit—showcases the local producers, affineurs, farms and markets that keep traditions alive, some of which date back centuries.

Sunday 25 April

Pailherols, the men of the mountain hut

As we make our way up the mountain pasture path, let us recall the men of the buron, walk in their footsteps and rediscover them: their language, their words, their ways, their songs, their skills and their secrets. Let us witness the rebirth of the ‘cantamerlou’. Across the landscape, all the way to the buron, let us recount their memories, for as long as we speak of them, they are still with us.

  • Meet at a place called Pailhes; a 1 km walk
  • Please bring sturdy shoes and water (there is no water available on site)

The tour is followed by cheese soup and cantamerlou, the precursor to truffade, courtesy of the local council (please bring your own picnic).

Saint-Clément: the little-known history of La Roque-Cascornutz Castle

From the 14th to the 18th century, through a succession of inheritances and divisions of estate, La Roque Castle has had a turbulent and largely unknown history. We will see how, over the centuries, the archives have enabled us to piece together the history of the castle, the families who owned or occupied it, and the hamlet of La Roque. A guided walk followed by a video screening.
