







Creator and ripener of small farmhouse tommes (700 g) made with raw milk from the Auvergne volcanoes.
We offer two types of maturing in our cellars on wooden boards. From three to five months' maturing: a beautiful marbled ochre paste, with a golden, buttoned rind. Its light, nutty, fruity taste is reminiscent of the flora of the high plateaux, particularly licorice. More than 6 months maturing: behind a pretty rind lies a dense, compact paste. It's at this point in the maturing process that SALERAC takes on its full roundness of flavor. Its long finish gives off aromas of roasted coffee and cocoa.
